Many of you guys have heard me talk about how much I love my Instant Pot. When I recommend this kitchen tool to others, the number one pushback I hear is that it’s too large. Yes it’s true, the Instant Pot is quite large so you’ll have to figure out where to store it. But, this kitchen tool is like owning several tools in one because it acts as a pressure cooker (this is the way I use it most of the time), a slow cooker, a sauter, a rice cooker and more! So donate some of your existing kitchen appliances, and make the Instant Pot your one, go-to tool!

Make Healthy Meals and Save Time!

The pressure cooker setting has changed my weeknight meals! It’s an easy, quick way to cook meals within 30 minutes, that taste like they’ve been simmering for hours. Similar to soups, you’re able to extract every nutrient from most Instant Pot recipes, because the fluid you cook your meal in isn’t thrown out afterwards like it is when you boil veggies.

You often make your whole meal in the Instant Pot, so dishes are minimal, and washing the pot is a breeze. Very rarely does anything stick to it, so clean-up is quick! Instant Pot leftovers are fantastic, so plan to make two dinners on one night; this will again, save you time.

  1. Broccoli & Cheese Soup: This soup is one of the best I’ve tasted! It’s definitely better than the restaurant version, and, when you make it with milk versus cream, it’s really not that high in calories. To make it even healthier, go lighter on the cheese.
  1. Eggroll in a Bowl: This meal is delicious and veggie packed. I’ve made it with both green and purple cabbage. I like purple cabbage better because it’s higher in nutrients, but be forewarned, the leftovers don’t look too pleasant the next day when you use purple cabbage (think, dog food!).
  1. Steel Cut Oats packed with Blueberries: I like making steel cut oats in the Instant Pot because you don’t have to watch and stir them like you do with the stovetop version. You just toss them in the Instant Pot and go do whatever else you need to do. Use a ton of blueberries and this breakfast or snack tastes more like dessert.
